    I have one of those metal probe-thermometers that goes up to 250F.

    This is from my moonshine bootlegging daze.

    But an easier way is just to try and cut it with a fork.

    If it cuts then it is done.

    You have to know cooking temperatures and how long each side.
    There is no way around that.I use an electric dutch oven style outdoor
    barbeque unit.It gives fantastic results.Sears the meat just right
    and lets it come out juicy and tender.Occassionally if the meat has
    a rind of fat on the outside it may cause the fat to drip on the
    electric burner and flame up.That happens about 1 in 50 times.
    About 3-4 times a year.
    It's always due to a cut of meat that has fat on the edges.However the
    cooker will smoke like crazy and I can usually catch it in time.
    A few sprinkles of water puts out the flame.

    Roy Rogers would go to great length on his motorcycle
    looking for nice places that serve real homemade pies.
    Of course he didn't wear a helmut.I didn't know this but about
    a year ago I was watching a 70's TV segment { some Crime show }
    and Roy had a nice role.
    I found it ... a - Wonder Women - segment.
    - The Bushwackers - { 1977 }. Anywho I noticed how short Roy
    was.I never noticed that as a kid watching his westerns.But I guess
    he was riding his horse mostly.
    Imdb has him listed at over 5'10".
    He seemed like around 5'6" in that Wonder Woman.
    But he ended the segment in usual grace.As the superfluous
    Good guy.Plus a true mentor for the younger generation.

    Family Drama Sunday. Days like this I miss the little dive bar that used to be a few blocks from home. (Its a tire shop now) Walking into that dark, smokey bar, climbing up on a barstool ordering a cold one... all your troubles just faded away. Maybe I can bring back the mood with my fav dive bar dancin tune.

    I don't know about Dallas, but dive bars (the real ones, anyway) are joining drive-in theaters on the endangered species list here in Denver. Once they've been "discovered" by the hipsters (and this dusty, old cowtown is crawling with them) their days are numbered.

    Explain a " dive bar ". Like in the movie - Barfly - { 1989 }.
    where they exist in spades due to the kind of neighborhood.
    Like a Red Light district.Or where Porno shops are.
    Again ... like in the flick - 8MM - { 1999 } a very good suspense
    movie.

    There are " dive bars " but generally they are in the heart of
    Red Light districts.Those are serious brawling bars.Usually small
    bars with really rough looking Barkeeps.Maybe a bouncer at the door.
    Either that or some rummy getting air because they so stiff they
    about to pass out.
    College bars are the most fun.I remember this one bar in Dayton
    called the - Moonlight -. I went to UD { University of Dayton }.
    Voted The best Party college in America by Playboy magazine.
    They weren't joshing.
    This - Moonlight - was so dark inside you could barely
    see yer table let alone those in the bar.It was also a place of
    urban legend.Supposedly this bar had a regular whore { some old
    lady } who used to give out BJ's.She was more famous than the bar itself.
    Kinda like the movie - Barfly -.

    Easy to pinpoint what killed neighborhood dive bars in Dallas... parts of the city used to be 'dry.' If one wanted booze, you either had to drive across town to a 'wet' area, or visit one of many 'private clubs' where, for a $5 membership, one could drink all they wanted.

    Now that there's a beer store on every corner, the need for private clubs died... along with dive bars.

    Just another casualty of an uber permissive society. :(

    We still have a ton of dive bars in Mass where I'm from. There's this little Chinese food place that turns into a bar at 5PM. The same 10 of us go there.
