-I avoid thinking they are mutually exclusive because I believe they aren't. A belief in God does not constitute a rejection of Science. Respectively, a talent or passion for science does not exclude a belief in Religion. If you want an example; Isaac Newton, one of the most renowned scientists of all time, believed in Christianity.
-Why might I think that God was responsible for the Big Bang, or actually created evolution? I don't necessarily think so, but I think it's a possibility because it has not been proved wrong, and possibly never will be. Just like I believe in possibility of evolution (a lot more evidence to support the theory of evolution, but perhaps it does not tell the whole story?) and even something outrageous such as scientology (though I tend to doubt theories such as this).
-Gravity exists and we cannot deny that, unless we are believers of flat earth. However, it is called a "scientific theory". Even gravitational theory has been refined over the past 200 years, with the discovery of the graviational constant and/or time-space.
-You said you await any evidence I have to offer on anything at all. Orange is a colour. We know this because: colour categories and physical specifications of colour are also associated with objects, materials, light sources, etc., based on their physical properties such as light absorption, reflection, or emission spectra. Typically, only features of the composition of light that are detectable by humans (wavelength spectrum from 400 nm to 700 nm, roughly) are included, thereby objectively relating the psychological phenomenon of colour to its physical specification. Because perception of colour stems from the varying sensitivity of different types of cone cells in the retina to different parts of the spectrum, colours may be defined and quantified by the degree to which they stimulate these cells. One of these colours is orange. Was this the evidence you're after?
