The expansion of the Universe will not eventually "pull galaxies apart faster than light, causing them to drop out of view.". It has been doing this since galaxies formed.
As to it remaining a theory, yes, of course it is. The theory of electromagnetism which powers all your electrical appliances and the quantum theory which runs your computer, are also Theories. Just as the GPS system which you might use if you had a car, relies on Einstein's Special Theory of Relativity to work.

GPS data is inconsistent with predictions from theory of relativity, it more closely resembles Lorentzian Relativity
The GPS system has been designed to use Lorentz synchronization.
I thought that was common knowledge?
