Cognoscenti will know that the Birdsville horse races are an internationally famous signature Australian event.<br />
<br />
Birdsville is in the middle of nowhere between the Simpson and Strezlecki deserts in outback Queensland, and it comes alive once a year for the famed Birdsville races, a huge charity event when thousands of adventurers arrive by private plane and bush track, where large amounts of Alcohol are consumed and some people even watch the races.<br />
<br />
And it rained. In a desert. The one weekend when nobody wants rain. I almost flew up this year with a few friends. You sleep under the wind of your aircraft.<br />
<br />
Maybe next year.<br />

You Can&#8217;t Make This Up: James J. Lee, Crazy Asian Environmentalist Alien Smuggler, Spun Against&#8230;Progressive Immigration Patriots!<br />

<br />
Despite hysteria from the Department of Homeland Security and left wing groups, inconveniently few right-wing terrorists or anti-immigrant hate criminals have ever materialized&#8212;especially when compared to the constant outbreaks of Immigrant Mass Murder Syndrome. <br />
<br />
Which is no doubt why these groups and their MSM allies seized on James Jay Lee, the crazed loner who on September 1 held the Silver Spring, MD Discovery Channel building hostage for four hours before being killed by the police. (Fortunately, no hostages were harmed.)<br />
<br />
Spinning the Lee incident against patriotic immigration reform is implausible on its face, of course, because that Lee surname comes not from the First Family of Virginia but from Korea. (I have not found anything definitive on the Lee family&#8217;s immigration history, but Lee did have his own history with immigrants. The San Diego Union Tribune has just reported: <br />
<br />
&#8220;Records in U.S. District Court in San Diego show that a James Jae Lee was sentenced in August 2003 to 18 months in federal prison for trying to smuggle an illegal immigrant in a hidden compartment in a car through the San Ysidro Port of Entry.&#8221; <br />
<br />
Lee was unquestionably a rabid environmentalist, who was apparently influenced by Al Gore&#8217;s An Inconvenient Truth. He tried to organize protests outside the Discovery Channel building over a number of years, including throwing money into the street to garner attention resulting in a disorderly conduct arrest.<br />
<br />
So how was this spun into an attack on immigration patriots? <br />
<br />
Shortly before his death, Lee released a manifesto of demands that he wanted the Discovery Channel to air. He listed a number of demands related to the environment, the economy, and war. Plank # 5 (unedited here) dealt with the environmental cost of immigration:<br />
<br />
&#8220;Immigration: Programs must be developed to find solutions to stopping ALL immigration pollution and the anchor baby filth that follows that. Find solutions to stopping it. Call for people in the world to develop solutions to stop it completely and permanently. Find solutions FOR these countries so they stop sending their breeding populations to the US and the world to seek jobs and therefore breed more unwanted pollution babies. FIND SOLUTIONS FOR THEM TO STOP THEIR HUMAN GROWTH AND THE EXPORTATION OF THAT DISGUSTING FILTH! (The first world is feeding the population growth of the Third World and those human families are going to where the food is! They must stop procreating new humans looking for nonexistant jobs!)&#8221; <br />
<br />
Lee was not &#8220;demonizing immigrants&#8221;. He used this language to describe everyone, regardless of national origin. He wrote: &#8220;Humans are the most destructive, filthy, pollutive creatures&#8221; And he demanded &#8220;stopping the human race from breeding any more disgusting human babies.&#8221; [Save the Planet Protest]<br />

Let&#8217;s put it this way: Lee was a misanthrope. <br />
<br />
But Lee&#8217;s fleeting mention of immigration was perfect for the Open Borders Left, which has recently launched a major assault against patriotic environmentalists opposed to mass immigration. <br />
<br />
Earlier in the summer, July 20, The Southern Poverty Law Center ($PLC to VDARE.COM) released a report &#8220;Greenwash: Nativists, Environmentalism and the Hypocrisy of Hate&#8221;.<br />
<br />
By an amazing coincidence, the very next day the Center for a New Community released its report Apply the Brakes: Anti-immigrant Co-optation of the Environmental Movement, [PDF]a special issue of its magazine Imagine 2050 on &quot;Race, Migration, &amp; The Environment&quot;. It is currently promoting a pledge to &#8220;stop the greening of bigotry&#8221; by saying &#8220;NO to the greening of hate and a resounding YES to the building of a democratic and diverse environmental movement.&#8221; [Stop the Greening of Bigotry, Center for New Community]<br />
<br />
Even more amazing, The Nation magazine simultaneously (July 29) ran a piece entitled Greenwashing Nativism by Andrew Ross&#8212;who, oddly, did not mention either report. <br />
<br />
You can imagine the content: all environmentalists opposed to immigration are really the puppets of the racist eugenicist John Tanton, blah blah. Yawn.<br />
<br />
But beyond this tired guilt-by-association rhetoric, there was a systematic effort to suppress patriotic environmentalists. Imagine 2050 demanded that &#8220;The National Council for Science and the Environment Should Dump Roy Beck&#8221; of NumbersUSA for the sin of allowing him to speak at their conference. It provided the phone number and e-mail for the NCSE&#8217;s leadership so their readers could harass them and demand that Beck be permanently purged. Its article was accompanied with a picture of Beck and a protester with a balloon summarizing their totalitarian tactics &#8220;Don&#8217;t Debate Hate.&#8221; [Race, Migration, and the Environment, Imagine 2050, July 2010 (pdf)]<br />
<br />
Days after this coordinated campaign began, Progressives for Immigration Reform&#8217;s Leah Durant was purged as a blogger for the Huffington Post. <br />
<br />
As soon as the Discovery Channel incident began, before Lee was even killed, Southern Poverty Law Center hitman Mark Potok blogged: <br />
<br />
&#8220;But unlike earlier eco-terrorists like Unabomber Ted Kaczynski, Lee zeroed in on immigrants as a primary evil. He spoke of &#8216;anchor baby filth,&#8217; a reference to babies born in the United States to undocumented immigrants&#8230;<br />
<br />
&#8220;The argument that immigration fuels environmental degradation has become increasingly popular in nativist circles. In late July, in fact, the Southern Poverty Law Center released a special report &#8212; &#8216;Greenwash: Nativists, Environmentalism &amp; the Hypocrisy of Hate&#8217; &#8212; that detailed how right-wing immigration restrictionists were attempting to appeal to environmentalists to join their battle. The report suggested that most of those making such appeals were disingenuous about their interest in the environment, and were merely cynically seeking allies.&#8221; <br />
<br />
Potok did concede &#8220;That doesn&#8217;t seem to be the case with Lee, who seems to have started out as an environmentalist, but one who became more and more extreme.&#8221; But apparently he just knows that&#8217;s not true for those evil &#8220;right-wing immigration restrictionists&#8221;.) <br />
And Colorlines&#8217; Julianne Hing made no qualifications: she putting the blame solely on immigration patriots who turned Lee&#8217;s &#8220;activism into hate&#8221;. She portrayed Lee as a thoughtful environmentalist who &#8220;wanted the best for the ailing planet&#8221; but was tricked into hatred. After gushing over the rest of his manifesto, Hing lamented:<br />
<br />
&#8220;Lee&#8217;s legitimate fears about the environment had been clouded in part by xenophobia. And not on accident, either. The gunman&#8217;s deranged demands brought to the fore tenets of a growing sector of the environmental movement that&#8217;s been co-opted by white nationalists and immigration restrictionists with extensive ties to anti-immigrant networks like the American Immigration Control Foundation, Californians for Population Stabilization, the Federation for American Immigration Reform (also known as FAIR) and its various offshoots like NumbersUSA and the Center for Immigration Studies&#8230;Lee seemed to have bought their lies.&#8221; [How the Discovery Channel Gunman&#8217;s Green Activism Turned to Hate, Julianne Hing, Color Lines, September 2, 2010]<br />
<br />
Think Progress, a blog for the left-wing think tank the Center for American Progress, weighed in on eerily similar lines:<br />
<br />
&#8220;Lee&#8217;s immigration screed bears a troubling resemblance to views and policies espoused by anti-immigrant groups such as Numbers USA, the Center for Immigration Studies (CIS), the Federation for American Immigration Reform (FAIR), Progressives for Immigration Reform, and others. Just this past month, FAIR released &#8216;The Environmentalist&#8217;s Guide to a Sensible Immigration Policy.&#8217; The report connects immigration to &#8216;pollution, sprawl, congestion, and ecological degradation,&#8217; complaining that &#8216;so-called environmentalists pretend as if this connection does not exist.&#8217; As usual, FAIR prescribes an overall reduction in immigration as the solution to the country&#8217;s environmental woes (in slightly more diplomatic terms).<br />
<br />
&#8220;It&#8217;s not a coincidence that many of these are amongst the same groups that have always supported changing the 14th amendment to deny &#8216;anchor babies,&#8217; or the American-born children of undocumented immigrants, citizenship &#8212; long before the debate entered the political mainstream this summer.&#8221; [Purported Eco-Terrorist Angered Over &#8216;Immigration Pollution And Anchor Baby Filth&#8217;, Andrea Nill, Think Progress, September 1, 2010]<br />

No matter how hard they try to spin it, trying to portray an Al Gore-loving, illegal alien-smuggling Korean as a nativist hate criminal will be a tough sell. I don&#8217;t anticipate this meme really harming patriotic immigration reform. <br />

Human beings need comfort. Human beings need something more than cold hard logic to believe in. Why? Because human beings are naturally fearful of the unknown.. and what bigger, more fearful unknown is out there than death?<br />
<br />
In times of strife, civil unrest, or severe hardship, human beings drop atheism MIGHT QUICK. Why? Because even if it's a false belief.. it gives them hope. It comforts them in times of need and great sorrow.<br />
<br />
This is a natural process and has nothing to do with whether God exists or not. Humans will always turn to something. <br />
<br />
Sure in a modern society it's easy to be humanist. In a broken one, where resources are slim, people are fighting for what is left, and life is not at all very much fun.. a belief in God develops to fill the void.<br />
<br />
What belief does Atheism offer people in times of hardship and pain?? Nothing.. literally.. nothing but a cold black empty void of sheer existence. That's not enough for most humans.<br />
<br />
I mean if you are the average atheist, and there is no hope left. No human being on the planet can or will help you, and you are facing imminent demise and hardship all the time. Where do you turn for hope?</div>

				This little girl has tuberculosis. Before the flooding in Pakistan forced her family out of their home, her father said she received medication for TB. Something she doesn't get in this camp.  Crowded conditions are breeding grounds for this deadly disease, whether in Pakistan or in Haiti.  Testing for TB can be slow. Patients take a sputum test, but doctors say it is not reliable. So a sample is also sent to a laboratory to be cultured. The culture develops slowly and requires highly trained technicians in order to make a diagnosis.<br />

Dr. Gary Simon heads the division of infectious diseases at George Washington University. &quot;Right now, it takes days to weeks to make a diagnosis and determine a resistance pattern,&quot; he said.  Now, scientists say they have developed testing equipment that takes only 90 minutes to produce results and is more accurate than current tests.  Dr. David Persing is with the California-based company (Cepheid) that makes the equipment. &quot;A key part of the technology is that it doesn't require a skilled operator to perform the test,&quot; he said.  Studies show the test is 98 percent accurate. <br />

Dr. Anthony Fauci at the National Institutes of Health says it will play an important role in diagnosing TB in both developing nations and developed ones. &quot;You have something that can be done quickly, on-site so that the person doesn't leave the clinic, because a lot of times they doesn't come back to the clinic, so you have them right there.  You make the diagnosis and you also have a good head start on what type of drug to put them on. It is an enormous advantage over just doing a smear of the sputum,&quot; he said.<br />

Me and my brother were having quite a deep debate on this the other day after watching a few minutes of the history channel. I've read as much as I could on the subject and I have my own theory but I would like to hear what the majority of PF thinks on it.<br />

If during the war, for whatever reason, the US never joined the war. And please, in this hypothetical situation, the U.S. doesn't even exist, just a body of water between Mexico and Canada. What do you think the overall outcome/timeline would have looked like? Would he(Germany) have completely conquered Europe? would he have moved on? who do you think would have been next? was anyone(country) else in the position to stop him?</div>

This morning, I realized that we were not eating as fast as we should and was presented with the suggestion to make a ‘pear crisp’ – here you go:<br />
Greased baking pan<br />
<br />
Peel and chunk, slice, etc. pears (even if they are a little bit hard, this will work) into the pan<br />
<br />
Dust with ½ tsp of powdered ginger<br />
<br />
If the pan is not at least half full of fruit, peel and cut up whatever apples you have to fill it out. Good choices are Northern Spys, Empires, other firm, crunchy, cooking apples (Macs are not really good with this; they get mushy)<br />
<br />
If you put apples in, sprinkle about 1 tsp of cinnamon on it. If the fruit is not particularly sweet (like if you use Spys), then add ¼ &#8211; 1/3 cup of sugar (depending on how sweet you like this sort of thing)<br />
<br />
Set your oven to 375 degrees F<br />
<br />
<b>Crisp topping</b>:  Mix up in a separate bowl&#8211;<br />
1 c. of flour (if you want to give it some oomph, add ¼ c. of wheat germ if you’ve got it)<br />
1 c. of brown sugar<br />
1 T. cinnamon<br />
Cut up one stick of butter or margarine and using a pastry blender, combine until you get small crumbs.<br />
Add 1 C of oatmeal (we like thick cut, but whatever you’ve got)<br />
Sprinkle over the fruit and shake the pan a little bit to settle<br />
Bake for 45 min until bubbly.<br />
<br />
If you want to add some protein to this (besides drinking a glass of milk with it), you can add to the topping when you mix it:<br />
½ cup of dried milk<br />
1/3 cup of hemp protein powder<br />
¼ cup of soy flour<br />
<br />
Enjoy.<br />

Okay, I get it.  I will never cut a hot pepper without a glove on.  I promise.<br />
<br />
It&#8217;s taken me a while to get to this point. I&#8217;ve <a href="http://www.eatingfromthegroundup.com/2009/09/chile-rellenos-with-brebis-blanche-and.html" target="_blank">deep fried chiles</a> and I&#8217;ve turned them into <a href="http://www.eatingfromthegroundup.com/2010/08/roasted-green-salsa.html" target="_blank">salsa</a>.  I&#8217;ve caressed them, slipped them out of their skins, and carefully removed every seed.  I like to get intimate with my hot peppers.<br />

But today we took our relationship to a whole new level.  Random, single and lonely hot peppers scattered throughout the refrigerator.  Dainty cherry bells, withered jalepenos just past their peak, royal crimson lees, exotic Hungarian hot wax.  They all roasted under that broiler together, and the smell of their popping skins was almost, you know, like <a href="http://www.eatingfromthegroundup.com/2010/08/roasted-green-salsa.html" target="_blank">that place I love this time of year</a>.  My eyes stung, my throat constricted around invisible spice, and I kept the girls out of the kitchen. (*). . . <br />
<br />
Then they sweat together in their covered bowl, and after a few minutes they were ready to shed their skins.  I wanted to be close to them without the barrier of the glove, and I worked on pepper after pepper with naked hands.<br />
<br />
I knew it was a mistake right away, but it was too late to remedy it.  You know it&#8217;s bad when the burn starts right away.  I like a little danger in the kitchen, but I knew I was in over my head.<br />

And then they were in the Cuisinart. The sting filled the air and I thought the smoke alarm might go off&#8211;if only it had a chili sensor.  A little sweet, a little tang, and there it was.<br />
<br />
Hot sauce.  Really truly.<br />

Midway through the day, I showed Joey my hands.<br />
&quot;Can you burn the skin off your hands with chili oil?&quot; I asked him.<br />
&quot;Oh, man- you haven&#8217;t been at the hot peppers again?  When will you learn?&quot;<br />
No sympathy from him.<br />
<br />
My hands are on fire.  More than I can ever remember.  I keep checking to see if they really are on fire.  I&#8217;m not touching the girls.  I&#8217;m not touching my face.  I&#8217;ve tried all the tricks&#8211;this fire&#8217;s burning until it goes out.  I lived dangerously, and I&#8217;ll pay for wanting to touch those chiles.<br />
<br />
I ate that hot sauce on my dinner and&#8230; it was pretty worth it.  But next time, I&#8217;m wearing gloves.<br />
<br />
Hot Sauce<br />
<br />
1 pound mixed hot peppers<br />
1 cup distilled white vinegar<br />
1 tablespoon salt<br />
1 tablespoon lime juice<br />
2 tablespoons honey<br />
<br />
Preheat your broiler, and line a baking sheet with aluminum foil or parchment.  Lay the peppers out on the sheet, and puncture each one with a fork.  Place the tray under the broiler until the peppers are black and bubbling.  This will take between five and ten minutes, depending on the heat of your broiler.  Flip the peppers over, and broil until the other side is black and bubbly as well.  Remove from the oven, and put all of the peppers into a heat proof bowl.  Cover with plastic wrap.  Let sit for fifteen minutes, and then the peppers will be ready to come right out of their skins.  Put on your gloves now.  Slide each pepper out of its skin, remove the stem, and remove as much seed as you can.  Put the skinned peppers into a food processor or blender along with the vinegar, salt, lime juice and honey.  Blend until smooth, about one minute.  Store in the fridge, for (I&#8217;m guessing here but stay tuned) up to a month.<br />

Responsible media outlets in the New York/New Jersey area are not giving the Ground Zero mosque imam wannabe a pass. New reports from The Record out of Hackensack, N.J., and the New York Post today reveal Feisal Abdul Rauf is a slumlord, owning several rat, roach and bedbug infested apartment buildings in New Jersey with no heat or hot water. Among other things. Rauf just settled a lawsuit alleging fraud in June and the developers owe hundreds of thousands of dollars in back taxes. Yet the city of New York is considering a grant of $70 million in public funding to build the mosque at Ground Zero. And there is much, much more! Read all about it in the following story: <br />

The elitist, media-generated grand illusion of the Ground Zero mosque imam has begun to collapse under scrutiny.<br />
<br />
New reports from The Record out of Hackensack, N.J., reveal Feisal Abdul Rauf, the would-be Ground Zero imam, owns taxpayer-subsidized apartment buildings in Hudson County where the tenants have made municipal health complaints including rat, roach and bedbug infestations, seeping toilets, leaks, urine-soaked hallways, no heat and no hot water. <br />
<br />
Despite millions of dollars in government subsidies, Rauf has trouble maintaining several small apartment buildings in North Bergen, Palisades Park and Union City.<br />
<br />
<b><u><font size="4">From the NewJersey.com report:  </font></u></b><br />
<br />
Page after page of municipal health records examined by The Record show repeated complaints ranging from failure to pick up garbage, to rat and bedbug infestations and no heat and hot water.<br />
<br />
Cynthia Balko, 48, of Union City -- a longtime tenant of Rauf&#8217;s -- said she&#8217;s had to live with rats, leaks and no heat: &#8220;I don&#8217;t have anything nice to say about the man.&#8221;<br />
<br />
Despite having received over $2 million in public funding for renovations, Rauf&#8217;s tenants were forced to file municipal health complaints to seek relief.  One such single mother living in a Rauf-owned apartment in Union City said Rauf has not answered complaints.<br />

<b><u><font size="4">From an additional story in The Record: </font></u></b><br />

To understand her perspective, you need to go to a forlorn corner on the Jersey side -- to 22nd Street in Union City and a four-story apartment building owned by Rauf. The locks on a front door are broken and the hallway leading to [Melba] Lopez&#8217;s two-bedroom apartment smells of urine.<br />
<br />
Looking east on 22nd Street -- back across the Hudson -- the Empire State building pokes the sky. On that side of the river, New York&#8217;s mayor speaks of Rauf as a symbol of religious freedom and last week invited the Imam&#8217;s wife, Daisy Khan, to dinner at Gracie Mansion to honor the Islamic celebration of Ramadan.<br />
<br />
But in Union City, Lopez, a single mother, has another way of describing the man who has time to promote the so-called Ground Zero mosque, but does not seem to have time to answer her complaints about leaks in her toilet.<br />
<br />
Lopez said in the report she has never met the would-be Ground Zero mosque imam but she says she has met Rauf&#8217;s wife Khan.<br />
<br />
Lopez said she remembers Khan telling her that she and her husband did not have enough money to fix her leak and other problems in the building. What Lopez did not know was that at the same time, Rauf and Khan were trying to raise money for their mosque project on the other side of the Hudson.<br />
<br />
According to the new reports, Rauf has a long history of taxpayer subsidies and grants for slum properties.  There&#8217;s even a new revelation of a lawsuit settled in June over what the report terms a suit alleging fraud.<br />

The suit alleged Rauf and Khan transferred ownership to another firm they owned and then obtained a $650,000 mortgage on the same building from a bank. After the building was damaged by fire in February 2008, Rauf and Khan stopped making mortgage payments to Cockinos, a former key executive at Daibes&#8217; Mariner&#8217;s Bank. When Cockinos tried to foreclose, he discovered Rauf and Khan had switched ownership and filed suit alleging &#8220;fraud.&#8221;<br />
<br />
The case was settled shortly before a June 28 trial, with Rauf and Khan agreeing to pay off the mortgage to Cockinos within the next few years, said the couple&#8217;s lawyer, Richard Rosa of Hackensack.<br />
<br />

The New York Post reported the site's developers owe hundreds of thousands in back taxes:<br />

The mosque developers are tax deadbeats.<br />
<br />
Sharif El-Gamal, the leading organizer behind the mosque and community center near Ground Zero, owes $224,270.77 in back property tax on the site, city records show.<br />
<br />
El-Gamal's company, 45 Park Place Partners, failed to pay its half-yearly bills in January and July, according to the city Finance Department.<br />
<br />
Sounds like a good time to raise $100 million for a mosque.<br />
<br />
Reuters is reporting New York is considering granting the group a reported $70 million in public funding.<br />

If theists have faith, and that to them justifies God's existence, then having faith that he doesn't exist, means that he shouldn't exist either! What this means is that Christians have the same reason to beleive he is real as to not beleive he is real - because they have no justification for belief in God in the first place!</div>

 <b>Part One-Some History </b><br />
<br />
 <a href="http://seminal.firedoglake.com/diary/68081" target="_blank">Last week I posted a diary on the essence of stocks, how to make them, and why stocks are SO important to the making of food! We’ve seen how the basic stocks are made.</a><br />
<br />
 As I stated last week stocks are the foundation and sauces are the building blocks to enhance prepared foods.<br />
<br />
 How did this come to be? Good question!<br />
<br />
 As we all know, the jump from food making to ‘cuisine’ was taken when the Italians, or rather the Medicis, brought their craft to France and it was readily embraced and incorporated! <a href="http://www.globalgourmet.com/destinations/france/franceback.html#axzz0ycUgPseN" target="_blank">Gotta Love Them Italians!</a> . . . <br />

 <a href="http://en.wikipedia.org/wiki/Catherine_de_Medici" target="_blank">I’ve always had a soft spot in my heart for Catherine de Medici.</a><br />

 Following the import of the Medici&#8217;s chefs and cooking techniques, France began to lead the way in all things gastronomique. The details are above in <a href="http://www.globalgourmet.com/destinations/france/franceback.html#axzz0ycUgPseN" target="_blank">THIS Link.</a><br />
<br />
 In the 1600&#8217;s it was Chef Francois de La Varenne, in the 1800&#8217;s Marie Antoine Careme set it to print, and then Georges Auguste Escoffier claimed the culinary throne with his legendary work.<br />
<br />
 <a href="http://en.wikipedia.org/wiki/Auguste_Escoffier" target="_blank">Escoffier Was And Is THE Baseline For Modern Haute Cuisine. Ask Any Chef!</a><br />
<br />
 All that led to <a href="http://en.wikipedia.org/wiki/Larousse_Gastronomique" target="_blank">THIS Seminal Publication, A Basic Staple As Was All Of Escoffier&#8217;s Work.</a><br />
<br />
 <b>And Now, To The Sauces</b><br />
<br />
 Anyway, going back to Larousse and Escoffier and all the others there are 5 basic sauces.<br />
<br />
 <ul><li>Bechamel Sauce (basic white sauce)</li>
<li>Veloute Sauce (basic blond sauce of unroasted bones of beef, veal, chicken, or fish)</li>
<li>Brown (demi-glace) or Espagnole Sauce</li>
<li>Hollandaise Sauce (butter/emusifications)</li>
<li>Tomato Sauce (red) </li>
</ul> And these form the bases for a thousand more! Yum! Nom!<br />
<br />
 I’ve got recipes I use for more than a few sauces, prepared from stocks. Some are clear, some are darker. In terms of the above, some are blonde, some are brown!<br />
<br />
 Remember the roasted bones and veggies? Remember the UNroasted bones and veggies? Blonde v. Brown!<br />
<br />
 So, where to start . . . my love is the sauces from the bones, but without the NON stock sauces, like Bechamel (I DO use chicken stock), Hollandaise, and Tomato, a kitchen is incomplete.<br />
<br />
 I guess I’ll start with MY version of the most basic, so let’s get on with the Bechamel!<br />
<br />
 <b>Larue’s Not So Basic White Sauce</b><br />
<br />
 <b>For one quart of Bechamel:</b><br />
<br />
 <ul><li>Saute in a two quart sauce pot 1 tablespoon of garlic and 1 tablespoon of shallots with about two tablespoons of non-salted butter.</li>
<li>Add 5 black peppercorns, and 5 cloves, and one/half teaspoon of nutmeg.</li>
<li>Add one quart of clear chicken stock (it will be a gelatin as you get it from the walk-in).</li>
<li>Reduce it by half.</li>
<li>Add two cups of white wine. Sauvignon Blanc for a dryer taste, Reisling for a sweeter taste depending on the dish.</li>
<li>Reduce that till the volume is one quart again.</li>
<li>Add two cups of heavy cream, or manufacturing cream.</li>
<li>Reduce that volume until it is one quart again.</li>
<li>Add splash white wine Worcestershire and splash of hot sauce for a kick (optional).</li>
<li>If necessary whisk in some light roux to tighten sauce (flour and butter cooked slow but not burnt, we’ll get into burnt butter sauces later on down the line).</li>
<li>Strain thru fine mesh strainer.</li>
<li>Reserve into a container in the steam table.</li>
<li>Or, at home, hold at 160F in a water bath till used. </li>
</ul> This Bechamel Sauce can get cheese melted into it (gruyere) for a topping on omelettes, souffles and such.<br />
<br />
 Add parsley, basil, tarragon, thyme, or your favorite herb to kick it up a notch for your usage.<br />
<br />
 Or it can get grapes (green seedless grapes) and sautéed mushrooms added to it for Sauce Veronique (crepes, omelette’s, poached eggs, or even chicken and fish dishes).<br />
<br />
 You can top your entrée with this sauce, and then put it under the broiler to brown the top if you wish.<br />
<br />
 This basic white sauce can have lemon peel added to it as it finishes on the stove (not lemon juice), and be used on top of white fish such as haddock, cod, halibut and such.<br />
<br />
 Herbs here are to your choice. I’d DEFINITELY add crushed capers to this!<br />
<br />
 If you want to be real true to the cause, substitute white fish stock for chicken stock when using it on fish dishes . . . like stuffed sole, rolled with shrimp and crab and basil, baked in the oven with the sauce and covered with a tangy white cheese . . . or even bleu cheese crumbles!<br />
<br />
 There are a multitude of ways to use this basic sauce, but the key is reducing the chicken stock, the wine, and the heavy cream. The cloves, shallots, garlic and nutmeg are key for ME, but it’s not the Escoffier way . . . .<br />
<br />
 In one recipe of a tri-color (I lean Italian) lasagna I make, I use this basic white sauce with cheeses and basil, along with meat sauce (Bolognese) and marinara (red tomato) sauce to form layers in between sections of white and green and red pasta (white, spinach pasta, tomato pasta). But that’s another time and place . . .<br />
<br />
 For now, I hope you’ve got a few new thoughts about how to season a basic white sauce, reduce it to make it intense in it’s flavoring and are thinking on how to use it for a new dish!!!<br />
<br />
 While I’m at it, here’s a Stuffed Chicken &amp; Cranberry Sauce recipe I made up long ago. Wish I had pics of THAT one!<br />
<br />
 There are some techniques tips in both the chicken part and the sauce part Pups might find helpful and/or inspirational.<br />
<br />
 So let’s get to it!<br />
<br />
 <b>Stuffed Chicken &amp; Cranberry Sauce</b><br />
<br />
 First the chicken, a simple Italian style stuffed chicken, with all the things that have calories in them! But an 8oz. breast should cut up into two servings.<br />
<br />
 That’s about 120 cals from the chicken, add 100 more for the cheeses and ham. 250 cals per serving max! Maybe, at most, 20 cals for a table spoon of the sauce. 270 cals!<br />
<br />
 <b>Stuff That Bird!<br />
</b><br />
<br />
 <ul><li>Pound thin one 8 oz boneless/skinless breast of chicken.</li>
<li>Brush lightly with Italian dressing, from a bottle, it’s ok!</li>
<li>Season with sea salt and fresh ground black pepper.</li>
<li>Smear layer of pesto to cover.</li>
<li>Lay some kind of ham, smoked if possible (prosciuto), to cover.</li>
<li>Shave thin pieces of Parmesan Reggiano, Asagio, or your cheese of choice.</li>
<li>Top with thin layer of ricotta. (Put ricotta into food processor with basil leaves and clove of garlic)</li>
<li>Roll chicken breast up (see *tip below!)</li>
<li>Brush with egg wash to seal.</li>
<li>Lightly flour with sea salt and black pepper.</li>
<li>Brown in saute pan using extra virgin olive oil or light olive oil.</li>
<li>When browned all over, drain oil and put pan in 425F oven for 5-10 minutes.</li>
<li>Check for doneness (firm to the touch, fully browned).</li>
<li>Set aside to rest.</li>
<li>If there are pan juices, reserve and add to sauce. </li>
</ul> <b>*TIP</b><br />
<br />
 <ul><li>Use a sushi roller laid out flat on your work surface.</li>
<li>Lay plastic wrap down on sushi roller.</li>
<li>Lightly oil plastic wrap.</li>
<li>Put pounded chicken breast down on plastic wrap.</li>
<li>Assemble/layer per above. </li>
</ul> When rolling up the stuffed chicken, use the sushi roller and plastic wrap to help tighten your rolled up and stuffed chicken breast!<br />
<br />
 So, now we gotta get sauced!<br />
<br />
 <b>Into one quart sauce pot:</b><br />
<br />
 <ul><li>Half cup red wine (Merlot/Zin/Cab Sav)</li>
<li>One 8 oz glass same for the chef</li>
<li>Half cup cranberry juice (lo cal)</li>
<li>Half cup diet ginger ale (yes, diet ginger ale)</li>
<li>Teaspoon fresh minced garlic</li>
<li>Teaspoon fresh minced shallot (or red onion)</li>
<li>Squeeze half lemon juice.</li>
<li>Cut half lemon you juiced into small bits, skin and all, add to sauce pot</li>
<li>Teaspoon minced fennel</li>
<li>Teaspoon chopped basil</li>
<li>Teaspoon diced fresh ginger</li>
<li>1/4 cup Teriyaki sauce or marinade</li>
<li>Reduce by half</li>
<li>Add two table spoons low cal sour cream</li>
<li>Reduce till thickens</li>
<li>Strain out solids.</li>
<li>Reduce more if necessary. </li>
</ul> The result is a vibrant purplish/reddish sauce that glows! And it’s low cal, also! Notice the absence of butter!<br />
<br />
 Spoon over the sliced chicken fanned out on the plate.? Add veggies of choice, no need for starch!<br />
<br />
 And enjoy a rich tasting, great looking and fairly low calorie (270 total) dish that’s easy to make in half an hour or so if you know what you are doing!<br />
<br />
 Well, that’s about it for today and I hope this dish and the thoughts above will tempt you Pups to try something new.<br />
<br />
 Now get out in your kitchens and get stuffed and sauced!<br />
<br />
 And while yer at it, raise a glass or two to Escoffier! And one for Medici! And Varenne! And Careme! Help the economy, buy a FEW bottles of wine! And toast them all . . . what glory they created for us all to follow.<br />

(like maybe UT3)  As I've said before, I'm Agnostic and therefore on the fence.  I'd like to know your opinions and your opinions on how God would view them?<br />

Yes, I play a fair share of FPSs or First Person Shooters, including the gibbilicous frag-fest Unreal Tournament 3, MAG, TimeSplitters 2 and Future Perfect, and Team Fortress 2.  If this doesn't turn into a flame fest, I might consider making on for Kingdom Hearts and other fantasy games (though the only other ones I can think of are Mario and Zelda.. I don't really like RPGs outside of the KH series), which would probably look bad because of all the &quot;sorcery&quot; taking place.</div>

I am curious I have noticed something odd and I am wondering if others are seeing it as well. The Democrats are losing on all fronts, you name it they are getting a  SHELLACKING. I have also noticed our liberal posters pointing out that Obama's approval is still somewhat holding up, despite the fact that they are in a very bad situation going by all the other polls.<br />
<br />
Well I have to agree with them, Obama is 43 at Gallup and 45.5 at Real Clear average. While he has gone down it would not seem to match the level of disapproval from the rest of the polls. Is this a case of Gotti Teflon?, is it the public showing a honest approval for this President? or is something else going on and people are sticking to the old saying;;<br />
''If you have not got something nice to say, then don't say it at all'' and they will show their real feelings in the voting Booth.<br />

Now I understand this is not the end of his term and you may say it's not about him. However other Presidents polls in this type of situation did reflect the feeling of the country. Could what we be seeing from the responses on the phones about his approval number  the Bradley effect?<br />
<br />
The Bradley effect, less commonly called the Wilder effect,[1][2] is a theory proposed to explain observed discrepancies between voter opinion polls and election outcomes in some US government elections where a white candidate and a non-white candidate run against each other.[3][4][5] Instead of ascribing the results to flawed methodology on the part of the pollster, the theory proposes that some voters tend to tell pollsters that they are undecided or likely to vote for a black candidate, and yet, on election day, vote for the white opponent. It was named after Los Angeles Mayor Tom Bradley, an African-American who lost the 1982 California governor's race despite being ahead in voter polls going into the elections.[6]<br />

I realize this is not the exact situation, but could it be having the same effect on these polls, the public is voting one way, yet his approval shows another....very odd. Anybody have any ideas?</div>

This is a nice, easy and quick snack or meal you can make up with that bounty of tomatoes you have in your garden, or those nice plump ones you saw at the farmer&#8217;s market.<br />
<br />
<b>Ingredients:</b><br />
6 slices sturdy bread &#8212; Italian, French, other artisan bread, cut into slices<br />
extra virgin olive oil<br />
1 clove garlic, peeled and cut in half<br />
<br />
3 cups mixed tomatoes &#8212; cherry, plum, or tomato chunks<br />
extra virgin olive oil<br />
1 clove garlic, peeled and minced<br />
fresh basil, washed, dried and cut into chiffonade (use to taste, may substitute dried if fresh unavailable)<br />
fresh oregano, washed, dried and chopped (use to taste, may substitute dried if fresh unavailable)<br />
fresh chives or scallions, washed, dried and minced (use to taste; about 2 TBSP used here)<br />
sea salt<br />
cracked black pepper<br />
<br />
feta cheese  . . . <br />
<br />
<br />
<br />

<b>Toasts:</b><br />
&#8211; Cut bread into serving-sized slices if not already cut.<br />
&#8211; Rub slices of bread on both sides with cut-side of garlic clove.<br />
&#8211; Sprinkle, spray or brush bread on both sides with olive oil.<br />
&#8211; Toast bread on hot grill until desired doneness, turning frequently.<br />
&#8211; Remove bread to platter when done.<br />

<b>Tomatoes:</b><br />
<br />
&#8211; Wash tomatoes and drain thoroughly.<br />
&#8211; Pour a couple tablespoons of olive oil into a saute pan and heat.<br />
&#8211; Add chopped garlic and saute until fragrant (do not scorch).<br />
&#8211; Carefully add tomatoes and saute about 2 min. over high heat, stirring frequently.<br />
&#8211; Add herbs and a sprinkle of salt and pepper, saute another minute.<br />
&#8211; Turn off heat and cover pan, let stand 2 min. or until tomatoes are soft.<br />
&#8211; Taste and adjust salt and pepper as desired.<br />
<br />

<b>Serve:</b><br />
&#8211; Ladle tomatoes over toast slices;<br />
&#8211; Slice feta cheese and serve along side or crumble and serve on top of each toast.<br />
<br />
<b>Notes:</b><br />
&#8211; Other cheeses like mozzarella or parmesan may be substituted.<br />
&#8211; Serve with a nice light-bodied red wine and a salad of tossed greens for a light summer supper.<br />
&#8211; Amount can be easily scaled up or down depending on how many tomatoes you have or guests you are serving. Allow at least 1/2 cup fresh tomatoes per slice of bread.<br />
&#8211; Some tomatoes will remain whole, others will burst and crush slightly during cooking (the red grape tomatoes stayed whole and the yellow pear tomatoes burst in my batch).<br />
&#8211; If using Roma or other tomatoes, cut tomatoes in half, remove seeds and excess liquid, then cut into bite-sized chunks.<br />
&#8211; Optional: add a dash of crushed red pepper flakes during cooking, or drizzle with balsamic vinegar just before serving.<br />

The bank, which owes $300 million, may now have as little as $120 million left in the kitty, though it had once been worth over a billion. But the problem is not just a run on one bank. Can Afghanistan’s whole financial system and economy emerge unscathed?<br />

The same world-wide real estate crisis that abruptly revealed the ponzi scheme of Bernie Madoff has undone Da Bank Kabul. But imagine if Madoff had not merely been a criminal who preyed on the wealthy, but had bankrolled a president’s political campaign with his ill-gotten gains and had brought the president’s brother and the brother of the vice-president into his inner circle. And imagine if he had been only one of a handful of financiers in New York with substantial capital.<br />

The story begins with Sherkhan Farnood, a financier who founded Da Kabul Bank after the fall of the Taliban. Over the years he appears to have used the institution for patronage for politicians and their families. Farnood gave millions to the presidential campaign of Hamid Karzai last summer, a campaign that Karzai was accused of only winning through substantial ballot fraud. (Hint: a vote wouldn’t cost much to buy in Afghanistan, and ‘millions’ would buy a lot). The other top executive at the bank, Khalilu’llah Frozi, was a campaign adviser to Karzai. Hamid Karzai’s brother Mahmoud has a 9% share in the bank.<br />

Instead of wiring money overseas, as banks typically do, Farnood used a traditional money-transfer or hawala service, the New Ansari, <b>which is also alleged to have been resorted to by drug smugglers</b>, some of whose proceeds go to the Taliban and other insurgents that kill US troops. Money transferred by hawala cannot be traced electronically. The New Ansari itself is under investigation by US authorities. Persistent news reports suggest that billions of dollars in cash are being flown out of Afghanistan to Dubai, and that, let us say, irregularities are involved.<br />

President Hamid Karzai is notorious for running interference for his corrupt cronies, and that Farnood and Frozi were out of control appears to have been known for some time but nothing was allowed to be done about it. The two have now been forced out, but the question is whether it is in time to save not only the bank (doubtful) but also the entire Afghan financial system, rebuilt after the fall of the Taliban.<br />

The Karzai government is corrupt and rotten to the core. Not a single US soldier should die to prop it up. <b>The lie that we are fighting “al-Qaeda” in Afghanistan needs to be exposed. The US and NATO are fighting four or five groups of Pashtun insurgents, some of them until fairly recently US allies</b>. The goal of the fighting is to keep the Karzai government from falling to the guerrillas and to train up an army and police force that could go on defending Kabul. The Afghanistan National Army from all accounts has poor morale. No wonder. What Afghan soldier or policeman would die for a ponzi scheme?<br />

NATO should not have allowed Karzai to steal the presidential election. (At least now we have more of an idea how the theft was accomplished). It should not have allowed him to block corruption investigations. <br />

You have to wonder if the Afghanistan parliament is up to impeaching Karzai. One thing is certain. He is part of the problem, not the solution, and as long as he is at the helm, the situation is highly unlikely to get better.<br />

And our troops will go on dying for a vague and probably unattainable goal that the politicians dress up in idealistic flourishes, and worse, dying for a lie.<br />

The family of Rachel Corrie, the American activist crushed to death in Gaza seven years ago, could face the men driving the Israeli bulldozer that killed her in the second stage of their civil suit against the state.<br />

The case, which began in March, reopened at Haifa district court today and will hear Israeli state witness testimony on her death. The 23-year-old had been trying to prevent the demolition of a Palestinian house in Rafah, in the Gaza strip.<br />
<br />
In 2003 an Israeli army investigation into the incident concluded that its troops were not to blame for Corrie's death. Her family says that a full investigation was never carried out.<br />

Representing the Corrie family, Hussein Abu Hussein, a leading human rights lawyer in Israel, said: &quot;It is clear that the army investigation was very far from being sufficient, thorough or impartial.&quot;<br />

-No. Just no. I don't want policy based on &quot;common sense.&quot; &quot;Common sense&quot; is often very, very flawed, and depends on a particular viewpoint and culture. If you're relying on &quot;common sense&quot; for your foreign policy or economic policies, then you should probably learn a bit more about those fields and adjust your positions accordingly, Mr. Politician.<br />

2) &quot;Putting more money in the hands of the middle class is the solution to all our problems.&quot;<br />
<br />
-All right. Personally, my understanding of economics is rather shallow. I'll admit that. However, call me a cynic, but I doubt that your promises for such a large slew of benefits for the &quot;middle class&quot; are either (a) going to happen, or (b) really going to be the very best thing for the economy as a whole. (My short-term personal economy is an entirely different story, though.) It seems akin to &quot;eat nothing but chocolate cake and you'll lose 20 pounds!&quot; It's far too convenient for everybody involved that the one thing that would be best for all facets of the economy would be the government granting targeted benefits to the largest portion of the population.<br />

-Yeah, the misapplication of opinion polls can be infuriating. An opinion poll is almost never conclusive evidence for something; it's an appeal to popularity for issues with less objective measures of &quot;correctness&quot;, and it can just be outright false when dealing with scientific theories and other such empirically-determinable subjects. An opinion poll does not supplant an argument for or against a position, yet I see just that happening far too often.<br />

 I&#8217;m single, simplistic, live in the semi-tropics, and prefer not to fuss or mess up the kitchen.  My cooking skills spend most of their time on the shelf, below saving the environment.  Therefore, I have several hints for the simplified life to be found by nuking the groceries.<br />
<br />
 Now, I do grow things in my garden and buy fresh veggies at the store, so some of these groceries are super healthy.  However, the sheer simplicity can be deceptive.  My disguise is pretty good, but indeed, I am pretty mobile for my advanced years, anyway.<br />
<br />
 Pictured above is one of several excellent ways to save a lot of trouble by putting a spot of olive oil, or butter, in a cup, add egg and prick the yellow with a toothpick, and microwave for about forty seconds (thirty if you like mushy).   I cover with a paper towel.   Anyone who&#8217;s cleaned up the mess of poaching an egg can appreciate this method thoroughly.<br />
<br />
 This concept of having a well-cooked potato is one that faded away long ago, and though I&#8217;ve been asking for other opinions, I have no idea where the idea came from that they should be microwaved/nuked for the real work, and time involved, in their cooking.   To the genius who first nuked a potato:  thank you Lord Of Spudness.<br />
<br />
 For awhile, I did the unthinkable and followed a helpful hint picked up somewhere, that a plastic bag was the proper cooking utensil.  NOOOO.   The fossil elements in your plastic bag are not good to eat.   Now, I have several glass covered cooking dishes, just the right size for a potato.   I usually put the washed but unpeeled spud, large size, into the dish and nuke it for about two and a half minutes.  Two minutes will do fine for a medium or smaller, of course.<br />
<br />
 Having thereby cooked the potato, I usually cut up the whole thing and brown it, with skins, in olive oil in a skillet.  For my taste, I usually start some slices of red or yellow bell pepper and onions with the sliced potato, sometimes even some sausage, and brown it until it&#8217;s crisp and looks pan-fried.   A friend advises that he loves the blackened grill effect so much that after it&#8217;s cooked, he likes to toss it onto a charcoal grill to give it just the right taste of outdoors and muscle, grilling it to the right visual aspect.<br />
<br />
 I also like to mix up  a veggie dip in sour cream, and fill the potato, unsliced, in a perfect rendering of a baked potato without heating up the kitchen or using the oven plus AC.  Filled with broccoli and cheddary cheese also makes a lovely meal, or side dish.<br />
<br />
 The other perfect subject for my magical microwave is the raw veggie.   If you think, as I hear all too often, that okra is slimey, you haven&#8217;t picked it fresh, sliced off the end, and nuked it for about a minute, if that.   I prefer crunchy, so it&#8217;s more likely to be thirty-five to forty-five seconds if I don&#8217;t have but a handful.  Though you can add seasonings, I like it best just plain.  For broccoli, a good handful does beautifully with the same treatment, but melting some cheese of the cheddar variety will give it a fillip that&#8217;s also fine, with or without the potato.<br />
<br />
 I know, I can now hand in any claim I may have ever held to the title of Gourmet.   I&#8217;ll trade it in for the Power Saver green apron, thanks very much.<br />

A handful of House Democrats are making health care reform an election year issue &#8212; by running against it.<br />
<br />
At least five of the 34 House Democrats who voted against their party&#8217;s health care reform bill are highlighting their &#8220;no&#8221; votes in ads back home. By contrast, party officials in Washington can&#8217;t identify a single House member who&#8217;s running an ad boasting of a &#8220;yes&#8221; vote &#8212; despite the fact that 219 House Democrats voted in favor of final passage in March.<br />
<br />
One Democratic strategist said it would be &#8220;political malfeasance&#8221; to run such an ad now.<br />
<br />
Democrats have taken that advice to heart; it appears that no Democratic incumbent &#8212; in the House or in the Senate &#8212; has run a pro-reform TV ad since April, when Senate Majority Leader Harry Reid (D-Nev.) ran one.<br />
<br />
Most of the Democrats running ads highlighting their opposition to the law are in conservative-leaning districts and considered the most endangered. They&#8217;re using their vote against the overhaul as proof of their willingness to buck party leadership and their commitment to watching the nation&#8217;s debt.<br />
<br />
Rep. Glenn Nye (D-Va.) says in an ad that went up last week that he voted against the law &#8220;because it cost too much.&#8221;<br />
<br />
Rep. Stephanie Herseth Sandlin (D-S.D.) says she voted against &#8220;all the bailouts and the trillion dollar health care plan&#8221; because &#8220;it wasn&#8217;t right for South Dakota&#8221; or for children anywhere.<br />
<br />
And an ad for Rep. Jason Altmire (D-Pa.) quotes constituents who say, &#8220;I like that Jason Altmire is not afraid to stand up to the president &#8230; and Nancy Pelosi.&#8221;<br />
<br />
More &#8220;no&#8221; voters are expected to release similar ads as the November midterm elections approach.<br />
<br />
It&#8217;s a far cry from where Democrats hoped they would be when they passed the landmark legislation in March. Many senior Democrats said last winter that the law&#8217;s popularity would increase as Americans were able to better understand the complex law and take advantage of its benefits.<br />
<br />
But the public&#8217;s views on the legislation may have been more settled than anyone thought.<br />
<br />
<b>Public support for the overhaul ticked up a few points shortly after the legislation passed, but all of those gains have since disappeared.</b><br />

Look up the word “Catholic” in an unabridged dictionary. You will see it is Greek in origin and literally means “universal.” The Christian religion was created from the myths and faiths of many older religions in order to unite the many races, nations, and cultures of the degenerate Roman Empire. Of course the financial power behind Rome had themselves proclaimed “God’s chosen path” in the new religion, then hired the Roman legion to murder everyone in Europe that wouldn’t accept it. Most of the stories about jews being persecuted are as phoney as the so-called Holocaust dogma.<br />

Today Universalism is also taught by secular institutions such as schools, governments and the media.<br />
<br />
I believe it is a mistake to hate every jew, Christian, or American, even though their institutions are determined to mix us out of existence. But nonetheless, as long as they embrace Universalism, they are our mortal enemies and it is a war to the death between us and them.<br />

For two centuries, the Christians and Americans have given the white man’s food, technology, medicine, and wealth to coloured races. And now they surrender the last of our territory, power, and women. This is insanity caused by a Universalist mindset. Nature declares separate, exclusive territory for the survival of each race and specie. Happy Holiday Sunday Bread Heads!<br />

This week we’re still working our way through some sourdough breads. Hopefully by now you have given into guilt and made a starter. If not, I’ll give the starter instructions below.<br />
<br />
There have been lots of requests and questions about making bread with whole wheat flour. Most of the more fancy recipes I have shared really can’t be made with whole wheat flour (okay you could make them with it but they don’t turn out like you would expect, especially croissants and the like, trust me on this). However, there are plenty of great whole wheat breads. A whole wheat sourdough is one of them. This recipe gives a really tart sour flavor and a little of the nuttiness that whole wheat brings. It does require a cup of white flour, though. Without it the dough will not rise enough and you will wind up with a sourdough brick and no one wants to eat that.<br />
<br />
So, on to the bread!<br />

<b>Sourdough Starter</b><br />
<br />
<b>Ingredients: </b><br />
<br />
1 cup 2% milk (non-fat is okay if that is what you have in the house, don’t use whole milk)<br />
3 tablespoons plain yogurt<br />
1 cup flour<br />
<br />
<b>Method: </b><br />
<br />
Sterilize a 1 ½ quart glass, ceramic, rigid plastic or stainless steel container by putting it in boiling water for 5 minutes. Wipe dry with a clean clothe.<br />
<br />
While the container is being sterilized, heat the milk to between 90 and 100 degrees (just lukewarm). Remove from the heat and whisk in the yogurt. Pour into the warm bowl and tightly cover. I like to use a container that has an air tight lid, as this is the easiest way, but plastic wrap and a rubber band will get you the same affect.<br />
<br />
Place in a warm place (90 degrees) and let stand for 24 hours. The best place for this is your oven with the light turned on. Place the bowl so it is close to the light. After a day the mixture should have curdled. It should be more dense than the milk, but not quite as dense as the yogurt was. If the mixture has a light pink tint to it, the milk broke. Discard the mixture and start over.<br />
<br />
If everything looks good, gradually stir in the flour until the starter is smooth and even. Recover the bowl and return to the oven for five days. If you need to use your oven in that time just set the starter near it on the counter and as soon as the oven has cooled down return it to its place under the light.<br />
<br />
After five days take the starter out and open the lid. You should have a good strong sour smell and the starter will be thick and bubbly. You can now store it in the refrigerator until you are ready to use it. Be sure to let it return to room temperature before using.<br />
<br />
To replenish your starter, add ½ cup of milk and ½ cup of flour to the starter. Stir until smooth and then place in the oven near the sponge. When the sponge is ready, put the starter back in the refrigerator. This will keep a good sour flavor and make sure there is plenty of starter for other recipes.<br />
<br />
<b>Whole Wheat Sourdough: </b><br />

1 ½ cups warm hot water (120 to 130 degrees)<br />

2 packages (4 ½ teaspoons) dry yeast<br />
2 teaspoons salt<br />
1 cup white flour (all purpose or bread)<br />
3 cups whole wheat flour<br />
<br />
Baking Pans: 2 8”x4” loaf pans, non-stick or greased<br />
<br />
<b><br />
Method for Sponge: </b><br />
<br />
The night before baking, in your large mixing bowl or the bowl of your stand mixer, combine the starter, water and whole wheat flour. Whisk together to form a thick batter. Cover with plastic wrap and place in the oven with under the oven light for 8 to 10 hours or overnight. The sponge will bubble and foam and increase nearly to twice its original volume in that time.<br />
<br />
<b><br />
Method for Dough:</b><br />
<br />
Remove the plastic wrap and stir down the sponge. Sprinkle the yeast over the top of the sponge, the salt and pour in the hot water. Using a wooden spoon or the flat paddle attachment of your stand mixer, stir for two minutes.<br />
<br />
Add the white flour ¼ cup at a time. Stir until it is completely absorbed before adding the next ¼ cup. Do the same with the whole wheat flour. If you are doing this by hand towards the end you might need to use your hands to mix the flour in. The dough will be thick and a little sticky.<br />
<br />
Cover the bowl with a tea towel and allow to rest for 15 minutes. If you don’t do this step the dough will be nearly impossible to work with. Have a cup of tea or something.<br />
<br />
If you are doing this by hand, turn the dough out onto a well floured work surface and knead with a strong push-turn-fold method. You will probably need some sprinkles of flour to control for stickiness. Knead for 10 minutes.<br />
<br />
If you are doing this in your stand mixer, attach the dough hook and knead on slow for five minutes, then as the dough becomes more elastic turn it up to medium. If the dough is really sticky, add a few sprinkles of flour, up to a ¼ cup. Knead for another 5 minutes for a total of 10 minutes.<br />
<br />
When the dough is kneaded, let it rest again for another 15 minutes.<br />
<br />
Divide the dough into two and form into balls. Cover with a tea towel and let rest for four minutes  (all this resting gives you a great chance to clean up the kitchen.)<br />
<br />
This bread will rise in the pans, so the next step is to form the loaves. To do this flatten on of the balls with your palms so you have an oval which is just a little longer than your pans. Fold it in half and pinch the seam tightly together. Set it in your pan seam side down and tuck the ends under . Repeat with the other dough ball.<br />
<br />
Cover each of the pans in wax paper and set in the oven with the light on (we’re looking for 80 plus degrees for this rise) . Allow to rise until the dough is above the level of the pan all the way around. This will take about an hour.<br />
<br />
Remove from oven and set a rack in the middle of the oven. Preheat to 425 degrees for at least 20 minutes. Right before baking, slash the tops of the loaves with a sharp knife. Slip the loves into the hot oven and bake for 20 minutes.<br />
<br />
After twenty minutes turn the oven down to 325 degrees and bake for another 35 minutes. The loaves should be nice and brown and have a hollow sound when you thump them.<br />
<br />
Turn the loaves out onto a wire rack to cool.<br />

Now you will have a the ultimate bread for cheese toast! This bread freezes tremendously well. Just double wrap it in plastic wrap and freeze. To revive let it thaw in the plastic then put it in a 325 degree oven for 10 minutes.<br />
<br />
Next week will be our last sourdough recipe for a while. It will be Sourdough Oatmeal bread. Talk about a hearty bread for soups!<br />

Amongst the accusations are the use of white phosphorus weapons against civilians, the deliberate targeting of UN sanctuaries and the cold-blooded murder of women under white flags of surrender.    War ?    They murdered fourteen hundred people-  <b>400 of them children</b> and at least five hundred more have died of wounds sustained.  That doesn't even consider those who have died as a result of sicknesses directly related to the destruction of the Gazan infrastructure.<br />

The selection of this alleged criminal is contrived to offend and to signal that the fascist regime intends more of the same.<br />

Americans should speak out against funding these warmongers.  Kick your Congressman's ass today.   He is , more likely than not, colluding with ethnic cleansers and war criminals.</div>

Many of us have heard whispers here and there about the injustices that affirmative action laws have done to non-minority groups, when quite honestly, there should be a roar. Why is this?<br />
Fear. The liberal media has taken to calling anyone who might call for ACTUAL color-blind equal opportunity as racist and bigoted, or those who disapprove of more qualified men being passed over for promotions in place of women, just to meet quota, as misogynists. There seems no ability to sit down and have a logical debate about the effectiveness of these laws. The minorities in favor use irrelevant emotional arguments and anyone who points it out is written off as a bigot.<br />
Let me point out that anyone who is alive today to have seen the remnants of slavery was not old enough at the time to have actually owned slaves. As a white female whose American lineage can be traced as far back as the time of the revolution, I can honestly say there is a good chance that someone in my ancestry had a part in slavery. And yet I certainly don’t give my racially mixed family members more chores to do when they visit my home! My sons don’t have a racist bone in their body, and their girlfriends are very intelligent, strong willed young women.<br />
Seeing as the only strong argument I ever hear in favor of affirmative action is due to all of the harm “we” have caused minorities, why is it my sons, who have never done anything to harm these groups, are being passed over for scholarships while their half-Hispanic cousin has a free ride to college? My nephew is no dummy, but neither are my boys. They have all been at about the same level of ability, grades, and extracurricular activities, yet because of the color of their skin, I have to go into debt to give them an opportunity to succeed in life. Then entering the workforce, they have to contend with racial quotas. Author Dr. DeFelice mentions in his book, “Attack on the White Male and the Weakening of America”, that colleges consistently hold “diversity days” and fail to invite white males! I truly dream of a world where I am not asked my racial background on every legal document I sign. I dream of a world where competition and greater skill choose our leaders for tomorrow, and not the amount of melanin in our skin or the nature of our genitals.<br />
Discrimination is wrong. To try to make right the injustices done to minorities by doing injustices to people of a majority is ridiculous, and someone needs to stand up for the white male and demand freedom from discrimination. Women outnumber men. And minority groups, when combined into one, outnumber whites. If all of the minority groups get together and fight for this legalized discrimination, who becomes the minority? Now who can't speak up for fear of attack??</div>

			<content:encoded><![CDATA[<div>Before closing, I would like to dispose of some of the sillier justifications for belief that church and state are not legally separated.  The Constitution gives the President an extra day to deal with Congress if the 10th day falls on a Sunday.  Does this read an acknowledgment of the Christian Sabbath into the Constitution?  No.  It merely recognizes that many people do not work on that day.  In dealing with Congress, an interesting question is the extent they do any work on the other six.  <br />
<br />
It is true that the phrase “In God We Trust” is on the money.  It was put there first during the Civil War.  While I am willing to admit that there may, indeed, exist persons who spend an inordinate amount of time reading money, most people are content to spend it, often on books.  The phrase has been judged neutral in that few but the fanatical read anything into it.  <br />
<br />
For those who blame the lack of mandatory school prayer for everything from a supposed decline in morals to the Challenger disaster and the common cold, remember that both Presidents Clinton and George W. Bush attended school when such prayer was mandatory.  Whatever one’s political leanings, this fact provides at least one argument against its efficacy.  <br />
<br />
Finally, it is true, in1954, during the McCarthy era, the phrase “under God” was inserted into the Pledge of Allegiance.  It was controversial then and it is controversial now, with the most rabid McCarthy holdovers being its loudest supporters.  It is also as meaningless as the religious test debate, serving only to discourage the honest while allowing the dishonest to make the statement with fingers crossed and mental signing statement in mind.<br />
<br />
While the First Amendment states that CONGRESS may make no law, the individual states CAN, right?  Wrong.  The Fourteenth Amendment states, in part, “All persons born or naturalized in the United States, and subject to the jurisdiction thereof, are citizens of the United States and of the State wherein they reside.  No State shall make or enforce any law which shall abridge the privileges or immunities of citizens of the United States…”  Since, in the legal sense, a corporation is a person, that loophole (which, indeed, never really existed) is closed.<br />
<br />
Finally, a word on the politics of the situation.  The issue of the separation of church and state is not a religious one.  It is a political issue, with those loudest in arguing against separation forming a political faction presently allied with (actually in partial control of) one of the major political parties.  Members of this faction have, by their words and actions, demonstrated an intolerance which should lead an American to not trust them with (in the words of a friend of mine) a book of burned out matches 30 feet underwater with a high wind blowing.  <br />
<br />
Bear in mind the fact that, if church and state are not separate, if they are merged, then they benefit from each other’s faults and errors as well as each other’s virtues.  Religious organizations which identify themselves with a government or political party become, in the public’s eye, an arm of that government/party, sharing both its virtues and its faults.  Even if the church escapes governmental control, it will taste the joys of guilt by association.  In cases where the church controls the government, ideology or, if you will, religion rather than fact and experience become the basis for decisions, usually with disastrous results.  The example of Saudi Sheikh Abdul Aziz bin Abdullah Bin Baz comes to mind, a man who issued a religious ruling to the effect that anyone who believed the earth was round was an atheist, and then had to print a retraction when a prince of the Saudi ruling house went up in the space shuttle.  The Sheikh looked like a raving mouth breather because he seems to have actually been a raving mouth breather.  The government of Saudi Arabia looked foolish because they were the ones employing him.  (Allen, Page 276)  In the case where the government controls the church, as was the case in Tsarist Russia, the church inherited all the hatred the government earned, and received, in reward, instructions to continue to support government policy, to the detriment of religion, with the result that churchmen and the nobility were shot as a matter of course and with equal enthusiasm during the revolution..</div>

The good news is that the wealth (median net worth) of non-whites increased $6,600 per person from 1998 to 2007. The bad news is that the racial wealth gap is widening.<br />
<br />
In 1998, the net worth of white households on average was $100,700 higher than that of African-Americans. By 2007, this gap had increased to $142,600. The SCF survey, which is supported by the Federal Reserve Board, collects this data every three years -- and every time it has been collected, the racial wealth gap has widened.<br />
<br />
In short: non-white wealth grew slowly and incrementally while wealth in white families grew 40 percent. Why such a huge gap?<br />
<br />
<b>Even when blacks have similar educations and incomes, they lag far behind their white counterparts in their quest to accumulate assets.</b> For African-Americans, equal achievement does not translate to anything near similar wealth.<br />
<br />
Some white families historically have enjoyed the benefits of government support and tax policies to buy homes, start businesses, grow wealth and prepare for retirement. Looking at one important historical example, few if any African-Americans were able to take advantage of the Homestead Acts that provided landowning opportunities for many whites.<br />
<br />
Recent history continued this pattern of blocked opportunity because African-Americans were mostly shut out of the greatest wealth-building opportunity of the post-World War II generation -- home ownership.<br />
<br />
Residential segregation, Federal Housing Administration practices and restrictive covenants on land titles blocked many African-Americans from owning their own homes for many years. Home equity is by far the largest bucket of wealth for middle-class Americans.<br />
<br />
The basis for excluding African-Americans from opportunities and creating different rules in the competition for success is no longer just about who is a capable worker, but also about who is a worthy credit risk.<br />
<br />
<br />
As wealth accumulation among African-American families had begun to expand recently, recession, declining stock prices, the foreclosure meltdown and processes of financial institutions converged to shrink, strip and consume it.<br />
<br />
Inheritance is another critical factor creating and maintaining the huge racial wealth gap. My work shows how even small inheritances or gifts can become &quot;transformative assets,&quot; which jump-start a child with college, a career and little debt. This puts him or her on the road to economic success. The starting line for young African-Americans is very different because they are less likely to inherit money from their families.<br />
<br />
Residential segregation is the linchpin of race relations in America, producing far less housing wealth in African-American communities. Homes appreciate more in value in predominantly white communities than in integrated communities, and homes appreciate even less when located in minority neighborhoods, especially in urban minority neighborhoods.<br />
<br />
Hence, the home appreciation calculus is more about location, location, location -- the racial and ethnic makeup of the community -- than the home itself. Also critical is the way in which substandard, inferior schools are located predominantly in neighborhoods where minorities and low-income families are concentrated. The integral connection between residential segregation, housing wealth and education is a fundamental challenge to be faced.<br />
<br />
The current housing meltdown and foreclosure crisis affects all communities. But it has a greater impact on minority communities, because subprime and predatory loans are disproportionately located in those neighborhoods. Wealth is thus being stripped from these communities while opportunities to build wealth through home ownership are riskier.<br />
<br />
The racial wealth inequality is the hidden fault line of American democracy. We need a new civil rights movement for the 21st century that focuses on economic opportunity and inclusion and closing the racial wealth gap.<br />
<br />
This means focusing on reforms that make tax code benefits like the home mortgage interest deduction more equitable; that enforce fair housing and lending laws already on the books, that provide consumer protection in home and education loans and credit cards and that insure equity in federal programs to rework risky home mortgages. These measures would be a good start.<br />
<br />

 August is ended, and it would be nice if that would prove to be the end of the silly season that has given us &quot;Ground Zero&quot; &quot;Mosque&quot; and Arizona&#8217;s law that drafts the police into racial purity enforcement.  Nice, but it seems with the taste of blood on their lips, the right is in full monster movie mob syndrome.<br />
<br />
 While we on the progressive side do tend to enjoy Death Panel nonsense, the crazies have been astonishingly prone to indulge the comedic side of their inventive tendencies lately.  Are we being a little overly optimistic when we see the funny side of <a href="http://www.youtube.com/watch?v=bJ-3zuafXDU&amp;feature=related" target="_blank">calling yourself</a> &quot;armed, dangerous and ready to fight&quot; on the right wing?<br />
<br />
 Naturally, the lone gunman who attacked Discovery Channel, even though he has no connection to anything advocated by the left, is fingered as a proof of the <a href="http://thehill.com/blogs/pundits-blog/washington-metro-news/117069-better-off-dead" target="_blank">violent tendencies</a> of that same left &#8211; that more usually is attacked for its education-supporting, elitist, Discovery Channel tendencies.<br />
<br />
 A brouhaha that once again tried to call us lefties a <a href="http://www.rollingstone.com/politics/matt-taibbi/blogs/TaibbiData_May2010/197151/83512" target="_blank">violence prone cult</a> makes us want to giggle, but should we be supplying the safe room instead?<br />
<blockquote>It seems <i>Better Off Dead</i> icon Cusack was idly tweeting yesterday and he rattled off this thing proposing the construction of a “Satanic death cult center” outside the Fox News building. The full tweet:<br />

 I AM FOR A SATANIC DEATH CULT CENTER AT FOX NEWS HQ AND OUTSIDE THE OFFICES ORDICK ARMEYAND NEWT GINGRICH-and all the GOP WELFARE FREAKS<br />

 In no time at all there were serious news stories blasting Cusack for going on a “rampage” and calling for the “Satanic death” of Newt and Dick Armey. “John Cusack Calls for &#8216;Satanic Death&#8217; of Fox News, GOP Leaders,” blared the Fox News headline. In a flash Fox was calling up academic experts who were taking this tweet that could not possibly be more obviously a joke and seriously calling it an incitement to violence. From the piece:<br />

 “His provocative tweets could easily incite a rabid fan to commit violent acts against Fox News Headquarters and others he names,&quot; said Dr. Carole Lieberman, a Beverly Hills-based psychiatrist and author of &quot;Coping With Terrorism: Dreams Interrupted.&quot;<br />
<br />
 And like magic, mere minutes later, the tweets from the internet peanut gallery rolled in, with conservative readers unironically ripping Cusack for advocating violence. “Remember lefties warn that Glen B was inciting violence with his rhetoric,” tweeted “Uniqname.” “Didn’t know he was a jihadist,” wrote “Taylor Nichols.”<br />

 “Calling for violence is never the answer to a disagreement, Mr. Cusack,” wrote “reaperzilla.” And “isn’t this incitement?” wondered “Harleybubba” (I swear, I didn’t make up that name).<br />

&#8230;I get that some of these folks are dying to find an example of a “liberal” inciting people to violence in the manner of oft-criticized right-wing heroes like Glenn Beck, but even taking that anxiousness into consideration, you’d have to be in virtual brain-death to take something like this seriously.<br />

 The wingnuts at large these days didn&#8217;t get through their finger-pointing stage yet.   We need better ways to work around them.<br />
