    I have noticed more Brit style "loin bacon"
    at high end markets and of course familiar
    with loin based, :flagcanada: bacon aka little ham.

    After due testing and considerations, it is
    concluded that - - - -
    Bacon comes from Pork Bellies, not loin.
    Loin based bacon is like fried ham
    Aussie bacon seems to come the closest to real bacon
    but that tag of meat just doesn't really belong with that strip
    of cured lines of fat and meat. It cooks differently. One end or the
    other becomes over or under cooked.

    Going to Microwave a Bacon Snack.

    That looks very pretty and, like Homer, I’m salivating.
    I’d cook the bacon first and chop it up before adding to the batter.
    I may well try this.
    I’ve never cooked cornbread.

    This is an upside down recipe
    bacon baked on bottom with batter on top.
    When done, flip and bacon on top.

    "Cook the bacon over medium heat on the stove top for about 3 to 5 minutes. Turn off the heat and flip the bacon over keeping it in order.

    Spoon the batter carefully over the bacon strips. Place the skillet into the oven 400F and bake for 20-25 minutes. A toothpick inserted into the center should come out clean."

    I didn’t read that bit.
    I’d still prefer the bacon through the whole cake rather than just on the bottom/top.
    Maybe double the chillies

    A "traditional Dutch" breakfast my best friend's father fixed us one day when we were just kids.

    Fry lots of bacon. Save the grease and keep it hot
    Fry some eggs
    Make toast
    Put lots of butter on the toast
    Place the bacon and eggs on the toast
    Pour lots of maple syrup on the toast
    Pour the bacon grease on the toast
    Enjoy a wonderfully healthy breakfast.
    Now run to your nearest cardiologist.

    My grandfather used to do it without the maple syrup.

    As for the thread topic, I like uncured bacon better than I do the traditional american bacon.

    Want something delish? Raise a porker on acorns and chestnuts. We raised Bruno on waste produce, acorns, chestnuts, and corn. We never had him cut. He was the best tasting hog ever. The ribs were pure heaven and I built a room and built an oak and hickory fire in the middle after salting the meat down. We had Bruno processed.

    Always, ALWAYS save your bacon grease and store it in the fridge. Bacon grease is Southern olive oil.

    One of my best friends in high school had property and they raised some cows. His father would not allow any animal to be named because his daughter would freak when they were slaughtered. Once you give them a name, they're a pet.

    Anyone try that bacon / cornbread
    upside down bread ?



    My reliable food service with good bacon
    switched to applewood smoked bacon :angered:

    Less about smoked, more about spray on sugary
    flavoring that causes it to burn black
    before it is properly cooked. :(
