Bison meat? Anyone experience?

    It reminds me of beef. I only had it once in a stew. It was good.

    I've found it too strong tasting for my pallet for most cuisines, but on the other hand I suspect that it would taste fine in most Vietnamese style cooking since it should blend well with their types of sauces.

    I've eaten it twice, I think. I'm no expert on the various cuts. What I had tasted good enough. It's quite similar to beef, yet different enough to be a nice change. What I had was too lean and dry. It was also quite... er, chewy.

    Well we would do it the german way. Slam it in a pan or grill and make it like Rouladen or a bit like a Steak. I heared its low on fat?

    Only really eaten it as jerky. Good stuff.

    I've had it in stew a few times and in burger form many times. They (used to) have a buffalo burger at the Caballas restaraunt/cafeteria (w/e its called). Very similar to beef. Im no good at describing tastes. It just tastes... healthier. Its quite good. I would be happy replacing the beef in my diet (theres a lot of it) with bison, buffalo, beefalo, w/e, should it become financially/environmentally/ecologically viable.

    Raising bison on a ranch isnt cheap. They are inordinately angry, violent, powerful creatures as far as bovines go, and require much more resources to 'keep' than cattle.

    When I was stationed in Kansas would go to a steak house that served bison, liked it if you go not need it well done.

    It is very lean and needs a bit of added fat, cheese, or bacon.

    Are they dangerous? Here in Germany we have their cousens. Its called Wisent. They are bigger than Bison and live in forest but are very shy.

    It's sort of like dry, tough beef. I suspect a slow, moist cooking method could help.
