Lot's of eyewitness accounts demonstrate him doing things that even by todays standards would seem impossible. And let's face it if one accepts the possibiliy of a God who by merely saying so can bring the universe into existence causing a donkey or a snake to talk would be child's play for such a being.
If you believe that then you believe that the giant eagles that carried Frodo away are true as well. Or that Zeus is real. Or that Mohammad flew on a winged horse. Your criteria for discerning which unscientific claim is actually true and which is not needs some work, I'm afraid.
The guy that wrote of Frodo was a Christian and much of the Lord of the rings is in nature a biblical allegory of sorts. But then your whole supposition is basically foolish.
