    I call them Devil Eggs...

    Boil eggs,

    Peel eggs,

    Find clear jar,

    Cover in vinegar,

Add onion, garlic, bell pepper, some fresh hot pepper(of your choice), not sure what these were(will update;)), peppercorns, pinch cumin seed, dash coriander...

A pinch allspice, and one bay leaf simmered in a bit of the mix.

Splash red wine, and a bit of red food dye for effect!

Put in fridge and wait at least three days for resurrection.

    Enjoy!

    Ohhh! I forgot parsley!

Early, and again... Towards the end...

Adds a nice green contrast and lends a proper twist in flavor.

Sounds good. I may try it.

Any idea on how or if the vinegar changes the nutrition quality of the eggs?

This sounds like an excellent and cheap source of shelf-stable protein, as well as a tasty snack.

    'ow 'bout pickled onions?
or gherkins, or what you might call pickles.

I'm a man of the world and I've never had a pickled egg nor to be honest has the concept ever seemed appealing to me. I can't begin to imagine what it might taste like and go 'I think I want that' - I just don't see it, but clearly there's something to be said since people do eat pickled eggs.
