Public Administration: work your way up in a bureaucracy or a non-profit organization, also applicable to many business positions. Make sure you get an internship.
Criminal Justice: police officer or law enforcement-related government job. If worse comes to worse, you can be a private i. You should probably get an internship for this one too.
Political Science: You'll end up like me, searching for just about any job. Eventually you'll find the kind of job that accepts any liberal arts degree as evidence of your ambition and flexibility. I majored in sociology, which is actually open to more jobs. Political scientists generally don't get social work or counseling-type jobs. You might be able to work for a political advocacy group, but you'll start out with very little or no pay. BUT if you keep your grades up, you can go to grad school. The PS degree will set you up for a masters degree in public administration, business, or law... or possibly a Ph.D in PS so you can be a professor.
International Relations: Learn Arabic, Persian, or Chinese as a supplement. They'll hire you for a lot of government agancies, including as an intelligence analyst or a diplomat. Also some private sector jobs will be able to use you for their foreign accounts and such.
