I don't think Quantrill refuses to "believe anything science has to offer". It's a highly selective kind of suppression. With literalists, it is always limited to the conflicts their scripture has with science, history, geography or other areas of investigation.

Fact is observation and theory is explanation. It is two different things.
Since evolution is both observed and explained for all practical purposes, it is both fact and theory.

Yes, when observation is considered a fact, then it is theory. Observation is going to be goverened by ones presuppositions. Scientists who believe in evolution are going to see evolution. Thus their observation is at best a theory. At worst, it is a lie. Which exists among evolutionsists also.
Scientists believe in evolution. They then seek the proofs of it.
