I don't think Quantrill refuses to "believe anything science has to offer". It's a highly selective kind of suppression. With literalists, it is always limited to the conflicts their scripture has with science, history, geography or other areas of investigation.
And I don't think he is jerking any chains. Unfortunately.

Yes, when observation is considered a fact, then it is theory. Observation is going to be goverened by ones presuppositions. Scientists who believe in evolution are going to see evolution. Thus their observation is at best a theory. At worst, it is a lie. Which exists among evolutionsists also.
Scientists believe in evolution. They then seek the proofs of it.
