    Since we have a 'favorite beer' thread, how about elaborating OFTEN what you are making/having for dinner.
    Recipes, or links to recipes are welcome.

    For lunch it was organic boneless/skinless chicken breasts baked in a mixture of honey and spicy mustard with basil and thyme. For greens I made a salad of fresh herbal greens, pea sprouts and mini heirloom tomatos with honey mustard dressing. The carb was a basmatic rice/quinoa mix with flax seed and almonds.

    I was going to get us lunch, but made it all up here at the office (microwave and toaster oven) for ~$16 for 5 meals.

    It's Friday so it's pizza and movie night. The kiddos will get their usual pepperoni and black olive pizza, light cheese and extra sauce :) . We will get our usual spinach, tomato, onion and black olive pizza with Parmesan cheese and marinara dipping sauce.

    I'm usually a fan of meat but for some reason this veggie mix gets me craving.

    Mini hotdogs, my own invention.

    Two cocktail franks (or little boys, as I prefer to call them) boiled right up.
    Two mini bread rolls, toasted. Cut them open and stick a cocktail frank in each one. Slather with sauce and whatever else.

    Great meal for one. :)

    I was working in the ED so it was hospital cafeteria food for me. Baked cod that was dry and over salted, potatoes that were undercooked and hard, creamed spinach that looked (and tasted) like baby sh*t and I topped it off with a 3 day old piece of cherry pie. A glass of water was the best part of the meal.

    Lol...poor Jason. We ate out last night and it sadly wasn't very good and the service wasn't either, but it's our local and the ambience is lovely and cosy.

    I was tired and couldn't be bothered reading the menu (you can link to it from the page above) so I just had a Spinnyburger and of course chocolate fudge cake, with 2 large glasses of merlot and a cappuccino.:p

    Tonight we're probably having this:
    Diced chicken breast
    2 tbsp oil (they use ground nut, I use low fat spray oil)
    1 white onion roughly chopped
    2 cloves of garlic finely chopped
    1 inch fresh root ginger peeled and finely chopped
    1 tbsp plain flour
    1.5 tbsp mild Rajah Madras curry powder
    1 pinch five spice powder
    1 tsp sweet paprika powder
    Low cal coconut milk optional (or a half inch cube of cream coconut)
    Chicken stock

    Method


    1. Heat oil over a medium heat in a pan or wok and add the onion. Cook until soft and transparent. Add the chicken and cook.
    2. Add the garlic and ginger and continue to cook for a further 2 minutes.
    3. Add the flour and curry powder and cook for a couple of minutes (paste like consistency)
    4. Add the five spice powder, paprika powder and salt, then add water or chicken stock if preferred a little at a time until the right thickness is achieved.
    5. Remove from heat, add the low cal coconut milk (if using) and stir into the curry.
    6. Simmer for a few minutes on a low heat then remove from the heat and allow to cool slightly.

    Pour over cooked basmati rice.

    Sugar peas
    Leeks
    Cauliflower and
    Carrots
    All steamed .
    A white sauce heavily seasoned .
    A bought trifle with double Extra Cream
    Bottle of Prosecco -- well chilled .

    Incidentally, Hospitals also serve eggs every morning. Kinda like drumming up business, isn't it?

    We had:
    Butterfly pork chops sprinkled with lemon pepper, garlic powder, salt, course pepper, pounded to keep all of it in, coated in flour and sauted, high heat in oil/butter blend.

    Alfredo side dish (Betty Crocker of course)
    Canned green beans.

    Just for fun I had my son clip some rosemary sprigs for garnish.

    And that was about it.

    Don't do a lot of cooking--mostly heating up or microwaving the processed stuff.

    Tonight we are having a mixture of real tacos. There will be pastor, lengua,azada,chorizo,cabeza, and chicken. Mmmmmm been awhile since we had a taco fest.usually make something simple on Saturdays like a salad and spaghetti.

    We had grilled chicken breast with fiesta lime seasoning, butter&herb rice, and garlic bread with mozzarella cheese on top. Not bad :)
