    Since yer mostly on a cooking jag,tonight I am fixing one of my
    favorite dishes.Beef Stroganoff.I'll add fresh cut mushrooms
    { I bought some huge white mushrooms called stuffers }
    some fresh cut carrots and whats left of my shallot and sautee
    in olive oil while adding fresh ground pepper and few squirts
    of Worcestershire sauce.When browned I'll add the Hormel Beef tips
    with Gravy and then the red wine.Adding ingredients like Paprika and
    sun-dried tomato and basil to further enhance.
    I have a nice sized chunk of Pork Loin leftover from Friday.
    The noodles will be Amish Old Fashioned Extra Wide or
    Essenhaus recipe.I add wine { whatever red wine I'm drinking
    and tonight that's Chateteauneuf - du - Pape.Add sour cream to
    thicken.I don't cook with Onions anymore.But I do have a small
    piece of shallot from the Chili I made last week.I added Pork Loin
    chunks and leftover chunks of Filet Mignon.
    I always wrap my leftovers real tight in Saran Wrap.
    Or the finished product in a bowl with a lid.

    I don’t ferment in plastic, I prefer glass or stainless. And the time depends mostly on if it’s an ale or lager. I don’t bottle, it goes into a corny keg and is force carbonated.

    I am in the process of winemaking. I have applewine aging and some grape wine working. I also made kool aid wine with bread yeast. The kool aid wine was not bad at all...however very sweet.

    I have a five gallon carboy full of grape wine working, but i prefer glass. Since I drink cheap wine i buy it in the big glass bottles. They look like the old gallon jugs. I haven't tasted my stuff lately....it will be another month.

    My wife has my 15 gallon fermenter full of apple juice from apples she picked and juiced. She used white labs wlp775 yeast and she saved a couple of milk crates full of apples to back sweeten. We will push it through a 1 micron filter.

    I used store bought apple juice, sugar, and Lalvin EC 1118 yeast. On another batch I used apple juice, grape juice, sugar, and the same1118 yeast. Time will tell.

    Lager Yeast used for Lager brewing is tempermental.
    It requires a lower temp for Fermentation to be steady.
    usually under 60 degrees.Sometimes around 45-55.
    Lager yeast will not activate at the same temp as Ale
    Yeast { feels comfortable around 70 degrees }.
    Therefore whatever place you put the fermenting beer
    has to be Ideal for either an Ale Yeast used or Lager yeast.
    If you don't bottle yer beer than what do you do if whatever
    container used is too small.Plus Bottle Aging adds character to beer.
    You have drop off yeast cells in whatever beer was in the fermenter.
    That is why you don't use all of the Fermented beer.The stuff at the bottom
    will be kind of gunky.Plus adding sugar by heating up with a little
    wort and adding to the finished fermented beer and then bottling is
    the Intermediate and beginner way to make Homebrew.

    Store bought juice is what we use when it isn’t apple season. Works just fine.

    What are you attempting to make.Some form of Apple Jack.
    I guess one could do as those in the Penitentiary and use their toilet
    and add cheap yeast to corn flakes and expect some form of libation.
    The more steps used and the quality of the ingredients and the freshness
    of the yeast { liquid pack yeast } will yield a better result.
    But the Fermentation process decides the basic alc. content.
    It's easy to have a stuck fermentation { the yeast is not reacting }.

    I am fortunate that Grocery store I use and have for over 25 years
    has a Gourmet Deli and a very nice Olive bar.
    Plus stuff like nice artichokes and sun-dried tomatoes.
    They have big green olives stuffed with blue cheese.
    Of course my favorite are just nice sized and healthy looking
    Kalamata.

    With a little added sugar you could increase the alcohol content to make it an apple wine. But I dont like it when too much alcohol ruins the taste. For me, when it gets over 11 percent the alcohol overpowers the flavor.

    I love olives; especially black olives. I just think it's sad that they get tossed in the can.

    I have one olive tree planted in my yard. This is the second year. If it makes it through this winter i will plant more. I also have 14 fig trees.

    I added sugar . Original gravity from just the juiced apples yielded a gravity of 1.064, we bumped it to 1.076 with sugar. The 775 yeast leaves behind some sweetness, doesn’t go too dry and leaves a whole lot of apple flavor. The red star champagne yeast “yellow packet” goes a bit too dry. We bump store bought juice with brown sugar to get the gravity and add a bit of nutmeg or pumpkin pie spice to the primary. Treetop and motts apple juice are about 1.046 specific gravity. Tree Ripened apple juice it about .020 higher. We don’t add any spices to the hand picked apples. No need to mess with perfection.

    You know more about it than I do. I bought a book on winemaking and follwed the directions. I don't have all the equipment yet so I am very primitive. The last time i tasted the grape wine it taste like Wild Irish Rose. I am hoping age will mellow it a bit.

    dunno about dat.With beer it's the Malt extract and grains that
    decide the beer and it's strength.The more malt and grains the
    stronger the beer.With Beer you don't add sugar until AFTER fermentation.
    It is added to carbonate the beer in the bottle.
    What determines the strength of a beer is the readings before and
    after the Beer.After the Beer is brewed or cooked and then after it's
    been fermenting.
    It's called a Hydrometer and it's essential for determining specific gravity
    or the weight of the cooked wort.Fermented beer has become lighter
    due to the yeast eating the available sugars.
    Think of a yeast cell like a Pac Man.
