The House for years, not just months, has been trying to overthrow a president and destroy our constitutional republic. Seems like the Senate -- and millions of others -- have much to bitch about.
You seem to favor a totalitarian state. If the President refused to leave, under the Constitution, the new President (in this case Pence) could have him arrested and prosecuted, because the old President would no longer be President and hence subject to arrest and prosecution. And, if the Court overruled the DoJ policy and if U.S. Attorneys failed to follow the Court's ruling, they to would become subject to impeachment and removal. Neither you or I determine what is a "high crime and misdemeanor" (other than for discussion purposes). The House does that. That's what "sole power" means. Yes, I am aware that the OLC is not a single person, but a department of the DoJ. I assume the AG could overrule the OLC if it was desirable...just as the President could fire the AG. Feel free to check the record, but I believe the current policy was written by a member of the OLC under the Clinton administration and that that person is now on the Federal bench.
I abhor totalitarianism and am certainly not proposing a removed president refuse to leave; I was just citing that as an example of what might happen. If a removed president refused to leave that would be an egregious violation of the Constitution, much like the current impeachment is. The House does not have unilateral and unfettered authority to decide at their whim what constitutes high crimes and misdemeanors, at least constitutionally. The rub is that there is no way to check or stop an unconstitutional House impeachment. The OLC makes legal opinions developed by a number of top notch legal minds in the DOJ. However the 2000 OLC Opinion was signed by one person, the Assistant AG, Mr. Moss, who did as you say later became a District Judge. The AG cannot overrule an OLC Opinion as such because it is just advising. An AG could ask for a rewrite though.
You seem to have trouble grasping the phrase "sole power." The House has sole power on impeachment. The Senate has sole power on trying impeachment. What is it you don't understand about that?

Sole power means the House alone can impeach and the Senate alone can try an impeachment. It does not mean they can do whatever they want, constitutionally.

And I quote, “Using the powers of his high office, President Trump solicited the interference of a foreign government, Ukraine, in the 2020 United States Presidential election. He did so through a scheme or course of conduct that included soliciting the Government of Ukraine to publicly announce investigations that would benefit his reelection, harm the election prospects of a political opponent, and influence the 2020 United States Presidential election to his advantage.” It was the soliciting that got Trump impeached. The same narrative was quite apparent in the testimony in the impeachment hearings.
