I've seen both Abrams movies, and while overall I did enjoy them, I had two problems with them. They were entirely too predictable to me, and they were just rehashes of old stories. So, I think i'm done with Star Trek. You see, I want to see original stories that are thought provoking without being preachy. That's Star Trek at its best. But the last movies, except for maybe Generations, was pretty much the same story with only a tiny bit of variation. Big villain with big weapon intent to do a lost of destruction. Now, I don't mind that sort of thing, but one of the big criticism among fans was the repetition of these stories. But I really really really want to see entirely new material. I would love to see a Star Trek movie that is about A Romulan war with the Federation, or even something with the Gorn. So I will give the next movie a chance, but if it's the same thing, then I think I'm pretty much done with Star Trek. Which is saying something because I am a very big fan of Star Trek.

At least two different groups produce Star Trek episodic shows: http://www.startrekcontinues.com/ http://www.startrekphase2.de/en/index.php I've seen a few of their episodes, and although the acting is not the greatest (there are all volunteers- you can't charge or you violate copywrite) the special effects are pretty high quality and the stories reflect themes that fans actually want to seem as opposed to a mass market movie.
I like the new star trek movies, lots of fun, but I know what you mean about formula movies. All the big budget ones are straightjacketed into story lines producers think they can get funding for. Risky stuff has to be low budget independent, and when it works on a large scale the elements that made it work are quickly absorbed into the formula of whatever genre it belongs to. Almost all big budget movies are predictable these days.
I thought that in both movies the "twist" was in the reimagining of the original star trek universe and done with both style and humour. The spock/kirk switch in sacrificing oneself for the good of the many was cool. Although the Montalban beat Cumberbatch While perhaps lacking in more meaty themes, I found the very entertaining.
I found Spock's reaction entirely lacking. For one thing, they weren't that close friends, so it was a bit too soon for that kind of thing, at least to me. And all it was to me was a reverse of TWOK, which made for a powerful moment in II. That scene in Into Darkness was just not that powerful to me.
Apollo did come back in one of those two links I posted (can't remember which one). And by that I mean, they actually did an episode with the original actor who played Apollo in TOS.
I'll still watch it forever but I have to agree with some of your points. It is a common complaint among movie watcher these days. Hollywood in general spends more time making old Tv shows, Old cartoons, old books and old movies into re-booted movies. New fresh ideas seem to be few and far betwen. Remember when Highlander was first released? Many critics tore it to pieces, it was panned all over the place. I loved it however. It seems many other people also loved it as it became a huge franchise which lost it's way on TV and in later movies. IMHO the gems coming out of whatever studio are the ones that the critics hate or ignore. Strangely enough those are usually the most original and creative.
I would like to see a big screen Star Trek war scenario. I know that Star Trek has always been about the scientific exploration of the galaxy and whatnot but when they decide to fight big battles they did it better than anyone else. The DS9 shows "Favor the Bold" and "Sacrifice of Angels" were the two best sci fi space battles in history. I'd enjoy seeing a modern movie in that sort of setting. I don't want to see one on one space ship battles I want to see an armada.
Deep Space 9 actually had some pretty good war oriented story arcs, the Klingon War, which was way too short in my opinion, and the Dominion War. They pulled out all of the stops for that. Some of the best Star Trek television.

Star Trek has become a brand to make money. In Italy we lived this phenomenon in an odd way: here it arrived first the first movie and then the first TV series [the effect was curious]. I am a Star Trek fan since I was a child and yes, the last series and the last movies don't give the same pathos than the original one. [A part that the original one presented a quite "aged" future ... without smartphones and touchscreen to give command to the ship ...]. The point is that the producers went back to a kind of parallel beginning. Good try, nothing to say, but they had to find a way to go further into the future or to put the word end to the sequel [Star Wars counts 6 movies, how many movies does Star Trek count?].
