    Try this..get you some nice thick chops, Put em in the oven @350..and roast/bake them about half way. Then take them out and poke some holes in them with a fork...about 1/4" deep...now..prepare about 1 tsp. SUGAR!! (yes, sugar) mixed with a pinch or 2 of ground rosemary (for 2 chops)...brush that on the 'up side' of the chop, just enough to dust it...Now, turn on the broiler and broil that sucker til' it's browned...turn, dust the other side and finish them off...

    Do they turn out more tender this way? That's my biggest problem with cooking pork in the oven, sometimes it comes out just right, but usually it's a bit on the tough side. I cook at 350 on the middle rack... time varies, I just check it periodically.

    Not too tender...but very tasty... Usually, with pork as well as beef, cooking at a lower temp helps..but I find that 'roasting' in a roaster oven on the stovetop in some liquid, then browning in the oven, helps. Meat eeks out juices and drys as it roasts. Good for gravy, not so good for tenderness. Really tender meat can be achieved by cooking in a 'slow cooker'. Put the chops, w/water in a slow cooker in the morning...then just before dinner put them in a broiler or in a fry pan to brown (adding butter to the pan helps get that nice crusty brown without drying out the center). My Granny cooked almost everything in a pressure cooker. Talk about tender meat..After pressure cooking, she'd brown on the stovetop. For me, browning is critical...I just can't eat 'gray' meat.

    Grilling out tonight. Hot dogs, Italian burgers and brat burgers. A nice German potato salad and three bean salad as sides. Fruit salad for dessert.

    Hot dogs are worse for you than smoking. Hot dogs and potato chips. All this time I thought hot dogs and potato chips were part of those 'basic food groups'; Fruits, veggies, meat, dairy, hot dogs and potato chips.

    No lettuce, tomatoes, onions... just seasoned beef, cheese, salsa, and warm crunchy shells. :D

    Carne Asada Tacos...2 small, flat, steamed tortillas topped generously with Carne Asada (providing the maker has the right recipe for Asada seasoning) then sprinkled with cilantro and onions...salsa on the side for dipping. These with some real re-fried beans made with an ample amount of bacon grease and topped with that delicious Mexican white cheese.. Great for breakfast, lunch and dinner...and a TV snack later.

    ...pile a handful of rocket leaves onto warm, toasted baguette slices or toasted crusty rolls split in half
    sizzle two sliced garlic cloves and a thinly sliced red chili pepper in light oil
    turn the heat up, add your prawns and cook until pink
    remove from heat, squeeze a lemon over it and add a handful of chopped coriander
    season it and pile it on top of the bread with the rocket.

    We usually have it as a starter, but tonight it was main course because of the mountain of rolls left over from yesterday:smile: I hope you enjoy it if you try it.

    Tonight it's Rosemary & Parsley Swai (fish) with Burgundy Mushrooms and Tomato slices topped with Mozzarella, Basil and Garlic.

    If you have a 'charcoal' burning grill, preferably a Weber Kettle...try loading it with seasoned fruitwood (like applewood) instead of charcoal..light it and wait until they turn to embers, then 'grill away'....the flavor of whatever you're grilling will be enhanced 50% (maybe 52%)
