Could being Gay be a Religion?

Your position is laughable. You can be fired for being gay. If you claim being gay is part of your religion you can still be fired. You can be fired if you say watching football is part of your religion. You can be fired if you say showing up to work late is part of your religion. But you can not be fired for saying you are Christian. That is the difference. And that son is a fact.

Not if he can prove that wearing the hat is part of a RECOGNIZED religion and it does not interfere with his work in any way. A Sikh US military officer was recently allowed to wear his turban while on duty for this reason. You cite ONE case where someone said being gay is part of a recognized religion and won in court and I will happily concede.

Of course you can. But to be accepted by the government it will need to have its own dogma, a certain number of members, organized services....etc. The Church of Monday Night Football is not a real church. It is NOT easy without all of that.
